I’m calling all strawberry lovers today. I have a strawberry treat today that is not going to disappoint. Ever since I can remember, I’ve loved strawberry anything. The fruit not so much, but any strawberry flavoured dessert and I’m all game! And since I can never say no to a strawberry milkshake, I thought why not turn them into cupcakes?
Boy am I glad I did. These cupcakes are beyond delicious and packed with strawberry goodness that you’ll find yourself going back for more. Trust me! Not only do they look pretty but they taste absolutely heavenly.
The basic cupcake batter I used is the same as the Fluffy Vanilla Cupcakes that I have made before. I find this recipe to be fool-proof and is sure to yield beautiful cupcakes every time. To the batter I simply added strawberry flavoured milk ( I added the nesquick strawberry powder to milk ) and diced strawberries.
Once the cupcakes were baked , I let them cool completely. I then removed a small amount of the center part of the cupcakes with a paring knife. You want to go about three-quarters of the way down into the cupcakes so you still have enough of a base to hold it together.
I then filled up a small disposable piping bag with strawberry jam and filled the cupcakes or you could just opt to spoon a small amount of jam into the centers.
Now comes the best part of these cupcakes. The frosting!! To the buttercream I added more of the nesquick strawberry powder and strawberries that I roughly mashed. I let the buttercream whip up until light and fluffy and frosted the cupcakes before garnishing them with strawberries.
The frosting alone is divine. I could not help myself from licking the frosting off the beaters. I’m pretty sure you will too 😛 Cupcakes are my new addiction now. I look forward to making more and trying out new flavours. I really hope you enjoy these as much as I did.
