One of the best things I love waking up to is a freshly baked muffin and a cup of coffee. What better way to start the day than with something ‘cakey’ that you don’t have to feel guilty about eating first thing in the morning. After all it IS always better to have breakfast than not. Right?!
Before I go on about these muffins, can I just tell you that I am obsessed with chocolate peanut butter anything. As a kid I used to love Goobers Chocolate Peanut Butter more than any other spread – I still do actually 🙂
Every time I spread it on a slice of bread, I made sure to cover the whole slice with no bits of white exposed underneath. And most often than not I would always slather on another layer…you know just as an added insurance. Yes, I’m that obsessed!
Okay now these muffins….you know that feeling when you just crave a muffin although you had a big fat one the day before? Yup that was me. I had a larger-than-life blueberry muffin the other night and I just had to have another one the very next day. Thank god muffins are one of the easiest things to make. I didn’t even have to use my stand mixer which made for less clean up. Always a bonus!
Don’t they look yummy? This recipe yields 8 muffins and were so easy to make. I literally dumped all the dry ingredients into one bowl and the wet into another and combined both together. I also added the chocolate chips to the dry ingredients first to coat them with flour. This distributes the chocolate chips evenly throughout the batter during baking thus preventing them from sinking to the bottom.
I used a generous amount of full fat creamy peanut butter for that peanut butter kick and a LOT of chocolate chips. The more, the better right? Every bite was soooo scrumptious and satisfying I couldn’t stop with one. Perfect with a hot cup of freshly brewed coffee. Truly a treat for breakfast.
